Could you please go visit riggsfamilyblog.com and pray for Abby? She is 4 and battling leukemia. She is not doing so well, and she could really use our prayers.

score!

I love love love Freecycle. If you're not a member of the one where you live, you should really check it out! In Savannah and here, we have gotten many good things! It's also an awesome way to find people that need things that we are giving away. I've been able to pass on clothes that the kids have outgrown and various baby gear.

This has got to be one of my fav things that we have scored! I was about to have to spend some money to get Shiloh's toys organized....and now we are GOOD! So excited!

what i already knew...

Do you remember when Tyrone switched units mid-deployment? He moved to a Calvalry unit. So, while he's not ACTUALLY a Cav guy, he is attached to them, he's their NBC guy (nuclear, biological, chemical). The cool thing about Cav guys? They get to wear spurs with their Class As!

So, guess what Tyrone brought home the other day? A certificate saying that he has been entered on the rolls of "The Order of the Combat Spur!" Here's what it says:

Be It Known That
SPC Tyrone L. Martin

with Carbine and Sabre, has demonstrated the Skill, Fitness, Dash, Discipline and Cunning of a United States Cavalry Trooper and is hereby entered on to the rolls of "The Order of the Combat Spur" and is authorized to don a pair of Calvalry Spurs at all formal Armor or Cavalry Formations.

So, I already knew that he had plenty of Dash and Cunning...but it's nice to be told by the army! :) Isn't it all very romantic? I think it is.....brings to mind Gone With the Wind or something. Or maybe I'm just losing it.....

Oh, and not only is he their NBC NCO, he's ALSO now their Training Room NCO. This doesn't come with a promotion or a raise or anything like that, and it's alot of extra work, but it looks good. It looks good that they thought enough of him to think he could do the job, and it will look good when he goes before the E5 board.

Here's to my dashing husband!

chicken cacciatore

Tuesday, February 3, 2009

I am really enjoying the adventure of finding new and yummy healthy things for our family to eat. It's almost become a hobby, and I had a wonderful response from people wanting recipes when I first posted about this. So, I think that I'm going to start a semi-regular feature of my favorite recipes that we have tried and approved. It might be every couple of weeks, maybe once a month. We'll just see how it goes!

For the Chicken Cacciatore, I even took my own pics as I went....what, do I think I have a cooking show or something?! lol....hmmm....there's an idea!!

Ingredients

  • 4 skinless chicken breast halves on the bone, about 2 pounds (**Bailey's edit-boneless works just fine!)
  • Salt and freshly ground black pepper
  • 2 teaspoons olive oil
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/2 pound white mushrooms, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 cup dry white wine
  • 1 (14 1/2-ounce) can whole tomatoes in juice, chopped and juice reserved
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon red pepper flakes or more to taste (**edit: we loved it like this, but if you're not a spicy person, you may want to use less)

Directions

Rinse the chicken and pat dry with paper towels. Season the chicken with salt and pepper.

Heat the oil in a saute pan over moderately-high heat. Brown the chicken on both sides, about 8 minutes. Remove the chicken.

Reduce the heat to moderate. Add the onion and pepper, cover and cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes.

Add the mushrooms and cook, uncovered and stirring occasionally, until the mushrooms begin to brown. Add the garlic and cook, stirring, for 30 seconds.

Add the wine and cook until reduced by half.

Add the tomatoes and juice, oregano, red pepper flakes and 1/4 teaspoon of salt and simmer the mixture covered for 10 minutes.

Return the chicken breasts to the pan and simmer, covered, until the chicken is just done, about 20 minutes longer.

It was sooooo good. Even Kaleb and Shiloh liked it (little Gabe with his tomato allergy had to have something else....he doesn't mind :) ) If you decide to try it out, let me know what you think!

doggie play date and sick kids

Monday, February 2, 2009

Sheena and I let Zoey and Domino have a little play date, with Domino on leash to keep things from getting to wild....Zoey weighs only 5lbs after all.

The always wonderful Sheena, watching the babies play

And, while Gabe is finally getting over the creeping crud that made his asthma flare, the rest of us have it now. K had to stay home from school, and Shiloh had been awake since 2:30 am when I took these pics around noon. Yuck, yuck, yuck!

i got an award :)

My dear friend Kristy at Franceska's Journey Home gave me my very first ever blog award, the Lovey Award! I love Kristy to death. She is so thoughtful and caring. She always does her absolute best to make sure I feel cared for :) I love you Kristy!

So here is how it all works!

"These blogs are exceedingly charming.
These kind bloggers aim to find friends and be friends.
They are not interested in self-aggrandizement.
Our hope is that when the ribbons of these prizes are cut, even more friendships will be propagated.
Please give more attention to these writers.
Deliver this award to eight bloggers who must choose eight more and include this cleverly- written text into the body of their award."

Okay, I really don't think I have eight people to give this to! lol

But, I award this to.....

Dawn at Wishing On a Star (maybe this will encourage her to do more blogging, especially now that her honey is home from Iraq!)

Salina at The Robbins Zoo (love seeing her new pics, her little girl is only 6 weeks older then Shiloh, and they have a son on the way!)

Suzanne at The Beautiful Collision (although with 2 kids, and one being a newborn, she may not have time to post this, and that's okay!)

Sheena at The Park Spot (She's a new blogger, and I predict great things, go Sheena!)

Alright, 4 will have to do!
